Baking Lemon Cream Cheese Cupcakes

I've only tried baking in school. My Mama likes to bake but it's really not our thing around the house. So, I thought I forgot what I learned in school. Surprisingly, the cupcakes turned out to be delicious. I guess if you know how to read recipes it should be easy.




Recipe: Lemon Cream Cheese Cupcakes

1 stick (125 g) butter softened
¾ cup (170 g) sugar
1 Tbsp grated lemon zest
2 eggs
1 cup (125 g) all-purpose plain flour
1 tsp baking powder
5oz (125 g) cream cheese, cut into small cubes, softened
¼ cup (60ml) fresh lemon juice
Lemon Curd Frosting:
¼ cup (85 g) readymade lemon curd
1 Tbsp lemon juice
1 ¼ cups (190 g) confectioner’s (icing) sugar

Preheat oven to 200 degrees Celsius. Line eight holes in a standard muffin pan with paper cupcake liners.
Using an electric mixer, beat the butter, sugar and lemon zest together until fluffy. Add the eggs one at a time, beating well after each addition.
Sift flour and baking powder into butter mixture. Fold in cream cheese and lemon juice and mix just to combine.
Spoon mixture into prepared liners. Bake 12 to 15 minutes until golden brown. Transfer to a wire rack to cool.
To make lemon curd frosting, whisk lemon curd, lemon juice and confectioner’s sugar together until smooth. Spread over cooled cupcakes to serve.
